Easy Spicy Ramen Noodles

Ingredients

  • 4 eggs (soft boil vs over easy, or both)

  • Bok Choy (Other greens: bean sprouts, baby spinach, romaine lettuce),

  • 2 green onions, thinly sliced. (keep white and green part separate)

  • 4-5 cloves garlic

  • Shimemi mushrooms, a handful

  • 3 TBS olive oil

  • 1 TBS red pepper flakes / course chili powder

  • Ramen noodles

  • Thai chili oil

  • Tamari

Instructions

  1. Soft boil eggs (6 minutes).

  2. Bring a large pot to boil (Green Pot) : 4 cups water + stock cube

    • Blanch greens in boiling water for 30 seconds)

    • Cook noodles for ** minutes (80%)

  3. Prepare

    • Greens of choice (bok choy, romaine), a handful

    • Thinly slice 2 green onions. Keep the white and green part separate.

    • Finely chop 4-5 cloves of garlic (2 tsp).

    • Shijemi mushrooms, a handful

  4. Next, create the Chili Oil: Heat 3 TBS cooking oil in small pan, on low. Add white part of green onion. Add garlic when onion turns translucent. Sauté until golden.

  5. Switch off flame and add 1 tsp red pepper flakes / coarse chili powder and mix. …

    • Set aside chili oil in a small bowl

    • Use the small pan to cook mushrooms

  6. Blanch greens.

  7. Add noodles to large pot & cook ** minutes.

  8. For topping: fry egg in chili oil / use soft boiled eggs

  9. Add 1/2 TBS thai chili oil and 1 TBS tamari to a serving bowl. Pour hot broth/sock (2 cups/ serving). Add noodles. Top with greens, egg, and green onion
