Creating Drool Worthy Pesto
A Household Staple.
Pesto is a staple in my household. I love pairing it with cavatappi & then having leftovers to slap on a sandwich. You’ll need FRESH basil to make sure it tastes amazing, and I usually buy my basil plant at Trader Joes. I’m setting the intention to have my own herb garden at home this year, because the feeling of growing something and consuming it for my health brings full body chills on how I can really learn to integrate more growth in my journey of conscious living.
Recipe
Pesto
Ingredients
2 cups packed fresh basil
4 cloves garlic, minced
1/4 cup toasted pine nuts (sub raw walnuts)
1 medium lemon, juiced
1/4 cup parmesan cheese (sub vegan parmesan cheese, if needed)
1 pinch sea salt
1/4 cup extra virgin olive oil
Instructions
Place all ingredients in a food processor & blend to combine. If it’s too dry, add a little bit of water.
POV: Taste it and add whatever ingredient as you go! Maybe you need a little bit more lemon if the taste isn’t coming through, or perhaps a little bit of olive oil to calm down the acidity.
