Sacred Sunday Ritual: Breakfast Food & Drink Prep (Staple Recipes)

My intention for 2024 was to support my health and wellness by creating more delicious meals, and recently I’ve been wanting to create a Sacred Sunday Ritual by prepping food that will help nourish my mind, body and spirit for the week ahead. I really love focusing my attention around this because the more that I support my health through food, the more grounded I feel. There is also a true delight that comes from tasting something that I made with love and intention. Taste is connected to our Root Chakra & tapping into this sense can help you feel grounded in your body, supported by the earth, and overall connecting to your first chakra helps you create a sense of safety.
This week, I centered my attention to ingredients that we already had that I could use for recipes. I love creating a meal list for the week ahead, and I added breakfast options I wanted to create for the week. Here is what my list for this week is: Lion’s Mane Burger and Fries (Sunday Night Football), Cauliflower Tikka Masala, Khao Soi + Tom Ka Kai Soup, Pesto Cavatappi + Side Salad, Cobb Salad + Salmon & Breakfast Ideas: Pescatarian Egg Bites, Raspberry Chia Seed Pudding & Citrus Turmeric Wellness Shots.
After creating the meal plan for the week, I ran through the recipe ingredients & added the ones I needed to my phone note’s list. I love doing this because it minimizes the amount of times you have to go out to the grocery store in the week! When you’re food prepping for the week & planning to going out to the store — figure out what type of mushrooms will benefit you for the week. Mushrooms are a STAPLE in our household! Since I’m making Tom Ka Kai Soup this week, and I wanted to get shimeji mushrooms because they are so dang little and cute (perfect for soup and for the egg bite recipe). You can find these at international grocery markets or at a local farmer’s market.
Lastly, for the breakfast recipes: you’ll want to make sure that you have some household items. I recommend a silicone pan for the egg bites.. it will just make life easier. I bought this one from von’s and the print of it just makes me so excited to create delicious bites, both savory and sweet! Also, if you don’t have an all purpose strainer, you’ll need one of those for the citrus turmeric wellness shots — I use this XL one, as I make green juices too and it’s been really helpful to have over the last few years.
Alright, are you ready to create some of the most simple and delicious recipes for the week ahead? Below are the ingredients, recipe flow, and my POV on these creations!
Recipes
Pescatarian Egg bites
Ingredients
7 eggs
1/4 cup of oat milk (you can substitute for whatever milk aligns with you)
1/4 tsp of salt
pinch of cracked black pepper
1/2 red bell pepper, diced
1/3 cup of green onion, diced
1/3 cup of red onion, diced
1/3 cup of mushrooms, diced (I love using shimeji mushrooms & I will use the top head of them; you can use whatever mushrooms you have access to.)
2 TBS feta cheese (this feta cheese from Trader Joe’s is my absolute favorite!)
Instructions
Preheat oven to 350 degrees. Spray silicone muffin tin with nonstick spray.
Whisk eggs, milk, salt, and pepper in a medium bowl.
Add bell pepper, green onion, red onion, mushrooms
Using a ladle, pour in egg mixture into each muffin cup. (The volume should be no more than 2/3s of the muffin cup.)
Sprinkle in feta to each muffin in & mix around.
Crack fresh pepper into each muffin tin & add a tiny tiny pinch of salt in each muffin tin.
Bake for 24-26 minutes until the egg mixture is set.
POV: It’s okay when you look in the oven and your egg mixture is so fluffy! It’s going to settle and you’ll have cute little egg bites. Once they are done, place them on a cooling rack. After they cool down, you can place them in a sealed container & put them in the fridge.
Raspberry Chia Seed Pudding
Ingredients
1/2 cup fresh raspberries
3/4 cup oat milk (whatever milk aligns with you)
1 TBS of maple syrup
1/2 tsp of vanilla extract
1/3 cup chia seeds
Instructions
Place raspberries, oat milk, maple syrup and vanilla extract in blender; blend until smooth.
Pour mixture into a bowl and add chia seeds; whisk together.
Place in fridge for 2 hours, or overnight
Serve on top of yogurt or oatmeal for a delicious breakfast!
Citrus Turmeric Wellness Shots
Ingredients
2 oranges, peeled
1 lemon (squeezed juice)
1 TBS turmeric
1/4 tsp cayenne pepper
4 cups of water
1 chunk of ginger (60-80g)
Instructions
Place oranges, lemon juice, turmeric, cayenne pepper, water and ginger in a blender. Blend 15-20 seconds.
Grab a tall glass bottle & place your strainer inside of it. Pour in mixture to the bag & squeeze contents into the glass bottle.
Repeat, adding the rest of the mixture in the strainer & squeeze contents into it.
Pour into mason jars and store in the fridge. Shake before you pour to enjoy!
POV: I am still learning what to do with the scraps of the mixture that is left in the strainer. I will be buying an ice cube holder and adding the scraps to that so I can make tea with them in the future. I just wanted to plant that seed in case you are also looking to reduce your waste!
Delicious Overnight Oats
Ingredients
1/2 cup oats
1/2 cup oat milk
1/4 tsp cinnamon
1 TBS honey or maple syrup
1 handful of raspberries (fruit of choice)
Option to add 1 TBS peanut butter (almond butter or nut butter of choice).
Instructions
Place all ingredients in a mason jar and stir around until well mixed. Seal with a lid in the fridge.
Store in fridge overnight and enjoy in the morning. (Can enjoy within 2 hours of creating.)
POV: You can always add more milk when you are eating your oats! You can also sprinkle additional fruit on top. These are incredibly quick to make the night before! They can be best stored in the fridge and enjoyed up to 5 days.
